Text left in the message box does not stay on the device. It is a draft held in your account, so a sentence half-written on a laptop is waiting in the same chat when you pick up your phone.
And if you attach a photo while that text is sitting there, it becomes the caption automatically. Type first, attach second — the opposite of what most people do.
What you will be able to do

The text already in the box moves into the caption field the moment the photo is attached.

An unsent draft is stored with your account rather than on the device, which makes the message box a usable place to think. Write the difficult reply on a real keyboard, leave it, and it is there on the phone later — still unsent, still editable.
A chat with a draft in it is marked in your chat list, so it also works as a small to-do list: the chats showing a draft are the conversations you have started and not finished.
The caption behaviour follows from the same place. Because the text is already attached to the chat, attaching media folds one into the other rather than producing two separate messages — which is what you want, since a photo and its explanation arriving separately is how context gets lost.
